Other than sippin’ on Bambus these past two weeks, and trying not to look like a lush, I’ve also been stuffing my face with lots of this Cranberry Bliss Saltine Toffee. In some parts, a version of this toffee is calledChristmas Crack. You know why?! BECAUSE this stuff is addictive! There’s no stopping. You just keep going back for more, even when your stomach tells you that you’ve had eeeenuff!
However, my version of Christmas Crack, inspired by the Cranberry Bliss Bars from Starbucks, is kind of better than the original, and I’m not just saying that. Well, yes, I am, but it’s my blog, so, I can do that. (Right?)
Honestly? This toffeeis some serious business. It’sfinger lickin’ – lip smackin’ – mouth droolin’ – WOW!
The whole thing about cranberriesand white chocolate on top of salted crackers and sweet toffee makes my heart sing. It’s kind of brilliant. But I really am looking forward to the batch that won’t go to my hipsand instead, it will finally make it to someone’s Christmas Stocking.

Cranberry Bliss Saltine Toffee

Cranberry Bliss Saltine Toffee is made from Saltine Crackers covered with sweet toffee, melted white chocolate and tart cranberries. This easy Saltine toffee recipe is perfect for the holidays!
2bags(12-ounces each) white chocolate chips, chopped
1tablespoonvegetable oil
1bag(5-ounces) dried cranberries
Instructions
Preheat oven to 400.
Line a jelly roll pan with aluminum foil and grease with cooking spray.
Arrange the saltines, one next to another, in a single layer; set aside.
In a small saucepan combine butter and light brown sugar; cook over medium heat, stirring frequently, until butter is melted.
Increase heat to medium-high and bring to a boil; continue to cook, stirring frequently, until it turns a caramel color; about 1 minute.
Remove from heat and pour over the crackers.
The crackers will start to move around; use a rubber spatula to set them back in place.
Bake in the oven for 4 to 5 minutes, or until mixture is bubbly.
In the meantime, set up a double boiler and combine chopped chocolate chips and vegetable oil in the top bowl.
Melt the chips, stirring constantly, until most of it has melted but remove from heat while a few lumps are still present. The chocolate will continue to melt while you continue to stir it.
Remove crackers from oven.
Pour HALF of the melted chocolate over the crackers and smooth it out with a knife; let stand 1 minute.
Slowly pour the rest of the melted chocolate and smooth it out again using a knife or an offset spatula.
Add dried cranberries on top.
Place in the freezer for 20 minutes, or until cold.

If your saltine toffee, or Christmas crack, is chewy, it's because the chocolate hasn't fully set yet. Try popping it in the fridge for 15 minutes to firm it up.
Saltine crackers are free from cholesterol, making them a heart-healthy snack choice. High cholesterol levels can increase the risk of heart disease, and incorporating cholesterol-free options like saltines can contribute to a balanced diet.
You don't want to eat too many saltine crackers (or even make them part of your daily diet) because they are high in sodium, easy to consume in excess and provide almost no nutrients. Cook until the toffee registers 285-290 degrees on an instant-read or candy thermometer and is deep amber brown in color, about 20-25 minutes.
Butter is added in the final stages to add flavor and smoothness and inhibit large crystal formation. Use unsalted butter so you can add a small amount of salt (¼ teaspoon per stick of butter) to the sugar/liquid mixture.

Look for crackers made from mostly or all seeds—think flax, sunflower, pumpkin, and more. “These supply healthy fats, fiber, and protein,” Keating says. They also tend to be gluten-free.
Make sure you choose your crackers carefully, as many brands are high in refined flour and added sugar, which may negatively affect blood sugar levels. To avoid these ingredients, always choose crackers made with 100% whole grains.
Saltine crackers provide moderate amounts of salt, which can become high levels with increasing portion sizes. Excess salt intake is linked to the development of high blood pressure and risk of heart disease.

As the toffee cools and the molten sugar crystals become solid again, they are attracted to the 'seed' forming new lumps of tiny crystals – hence the grainy texture. This can also happen if the toffee is stirred, or agitated, after it has begun to boil or on cooling (as happened with this pink-tinted toffee).
But overcooked toffee will be just slightly crunchier (almost unrecognizably). So, always err on the side of over-cooking! Tip 2 explains how to do so! In order to avoid your chocolate turning white, you'll want to let it set in a room temperature spot without exposure to any drafts.
If your toffee doesn't have a hard texture (where you can snap it in half) you did not cook it long enough. Again, the 5-minutes is just a guide. Cook it until it is the color of a brown bag.
